Wheat Free Christmas Cake Recipe - Safe for Your Dog!

This yummy, moist Christmas cake recipe for dogs is safe for dogs to eat and bursting with juicy sweet potato and papaya dog treat goodness. It's rich in important vitamins and anti oxidants with a flavour dog's love.

This cake can be made all year round, for birthdays and other special occasions. It's a fun way to give your dog a cakey treat. I'd go as far as to say it's Doggie-licious!

This cake can be stored in the fridge for up to a week. It can also be sliced then frozen in bags to take out when a special occasion presents itself.

My Itchy Dog Blog Christmas CakePreparation time: 10 minutes
Cooking time: 40 minutes

For the Cake:
80g (3oz) gluten and wheat free flour
2 tbsp low fat natural yogurt
1 tbsp chopped Soopa sweet potato
1 tbsp chopped Soopa papaya
1 tsp baking powder
1 tsp pure vanilla extract
1 tsp olive oil
1 tsp honey
1 tsp cinnamon
1 egg

180 grams low fat cream cheese
1 tsp olive oil

To Decorate:
40g (1 ½ oz) gluten and wheat free flour
1 tsp coconut oil
1 tsp all natural red, green, pink or blue food colouring, get creative!
 

Method: The Cake

Preheat your oven to 180°C (350°F) Gas 4. Soak the chopped sweet potato and papaya in warm water for 5 minutes to soften then drain. If you don't have any Soopa sweet potato and papaya then use unsweetened papaya, coconut chunks or even dried apple and banana.

Mix together the flour, egg, yogurt, baking powder, vanilla, olive oil, honey and cinnamon in a mixing bowl. Fold in the softened sweet potato and papaya into the mixture and stir well.

Pour the mixture into a greased 5" sandwich tin. If you don't have a suitable sandwich tin then fill three greased muffin cups leaving a little room at the top for the mixture to expand. Bake in the preheated oven for 40 minutes then transfer to a wire rack and leave to cool.

The Icing

To make the icing, beat the cream cheese and oil together until fluffy. Spread it over the top and sides of cake and use the back of a spoon to fluff it up.

The Decorations

To make a holly decoration mix together gluten free flour and coconut oil then gradually add water until you have made a dough. Add the food colouring and blend into the dough with a spoon then chill it in the fridge for 20 minutes before you get creative!
